Spinach Stuffed Turkey Tenderloin

This is a nice dish for company, but easy enough for everyday. It is low in both calories and carbohydrates. Adjust the cayenne pepper to your own taste. You can substitute feta or mozzarella cheese for the Goat cheese.

Ingredients

2 turkey tenderloins, about a pound total

2 cups spinach, fresh baby, chopped

3 ounces goat cheese, fresh, or feta or gorgonzola

1/2 teaspoon pepper, black, ground

1/2 teaspoon salt

1 tablespoon olive oil

dash cayenne pepper

1 teaspoon paprika

Preparation

Preheat oven to 425 degrees. To make the filling, mix the spinach, goat cheese and pepper in a small bowl. Make a pocket in each tenderloin by cutting lengthwise from one side almost to, but not through the other side. Spoon the stuffing into the pocket and secure with 3 or 4 toothpicks to hold the stuffing in place. In a small bowl mix the oil, paprika, salt and cayenne pepper. Brush evenly over turkey. Bake for 30 minutes. Remove toothpicks and slice crosswise. Serve.
